Manual harvesting of grapes in small boxes, with the utmost care to safeguard their integrity and the optimal degree of ripeness.
Vinification in white with gentle pressing of whole grapes and first fermentation in steel at 15°C with refining on noble feces for 7 months. Tirage in March, bottling and refilling on yeasts for at least 12 months.
It is recommended to serve it fresh, ideal in combination with the typical salami of the area (Culatello di Zibello and Spalla Cruda) or a whole meal with fish dishes.
It is also great as an aperitif or wine for meditation with desserts such as jam crusts or dried cakes.

A vine that in our area manages to give excellent bright white wines with a high presence of aromatic substances both in the skin and in the pulp.
It was once considered the “noble wine” that the peasants gave themselves during the holidays and on Sundays with a slice of homemade cake of pasta frolla and jam.
Today we, from the selection of the same grapes, have created a noble and refined sparkling, of the light palm color, fresh and natural with a fine and persistent perlage... simple and ideal for all occasions!
