CULATELLO DI ZIBELLO ( DOP ) – Slow Food presidium

The phiplosophy of Bre del Gallo has been identified and crtificated by the Association "Slow Food", marking Bre del Gallo as a real producer of the Culatello di Zibello presidium .

Fondamental characteristics :

  1. pork meats are selected only from local farms;
  2. traditional and well known activities of working the meat only in the winter period, from november to january;
  3. absence of preservatives and chemical additives;
  4. typical cellars, ideal for the maturation of the Culatello di Zibello, as used in the past;
  5. minimum 18 months old with weight non inferior to 4 Kg.
